Appendix cancer survivor relishes life and giving back | UCI Health


In August 2023, Kat Kitchen’s life took an unexpected and challenging turn when she was diagnosed with a rare and aggressive form of appendix cancer, known as appendiceal adenocarcinoma, at the age of 60. This revelation followed months of misdiagnosis regarding an abdominal infection, a journey that included an aborted appendectomy and a series of extensive tests that finally led to a definitive cancer diagnosis.

Upon learning of her stage IV cancer, which had spread, Kitchen was understandably overwhelmed. “To go from being completely normal and healthy to being told I had stage IV cancer with a poor prognosis was overwhelming,” she recalls. However, amid this turmoil, she tapped into her resilience and a strong desire to ensure her daughter, Jess Feldmann, could fulfill her own dreams.

After conducting diligent research, Kitchen found UCI Health’s Dr. Maheswari Senthil, a highly regarded surgical oncologist specializing in rare cases of appendiceal cancer. Under her care, Kitchen underwent a significant surgical procedure on October 6, 2023, where extensive measures were taken to remove all visible cancer and follow-up with heated chemotherapy. The operation was a 16-hour marathon, resulting in the removal of her appendix, gall bladder, one kidney, part of her liver, and other affected organs. Remarkably, just three weeks post-surgery, she was back to normal activities, unfazed by the potential need for a colostomy bag, thanks to the surgeon’s skills.

Chemotherapy treatment commenced shortly afterward, delivered every three weeks for six months by medical oncologist Dr. Jason Zell, who provided not just medical support but also emotional reassurance during this challenging journey. “If you get any symptoms or side effects, call me. I don’t care what time it is; I’m here for you,” he remarked, quickly disarming Kitchen’s initial fears.

During this period, the bond between Kitchen and her daughter deepened through their joint venture of launching a facial spa—Apothek Aesthetic Lounge—aimed at providing beauty treatments specifically for cancer patients. They recognized a need for spaces where those experiencing similar health crises could feel a sense of normalcy and beauty, even amidst adversity. With discounted treatments that utilize chemo-friendly products, the spa opened its doors in May 2025, creating a welcoming retreat that embodies their shared mission.

Kitchen and Feldmann have also pledged their support to the broader cancer community by participating in events such as the UC Irvine Anti-Cancer Challenge. Here, they host booths offering wellness treatments, aiming to uplift others navigating their own battles against cancer.

Despite being closely monitored for potential recurrence, Kitchen feels a renewed sense of purpose and vitality. As she approaches the second anniversary of her surgery, she considers it her “new birthday.” With gratitude for the exceptional care she received at UCI Health, she reflects on the journey and the changes it brought not just to her life, but also to her family and community efforts.

Cancer of the appendix is rare, affecting fewer than one in 1.5 million people. However, recent studies show an increase in such diagnoses, particularly among younger adults, underscoring the importance of awareness and research. Kitchen’s experience serves as an inspiration, highlighting the resilience of the human spirit in the face of adversity.
